It has the potential for a Star Wars-esque trilogy, especially if they form a new rebellion to fight the federation/government/empire (whatever the fuck it was).

I definitely would like to see how things would have progressed. A sequel would be nice, and I'd definitely be first in line to see it, but it's really unfortunate that the show got cancelled. Whedon was planning on having the series last at least seven years, and no movie is ever going to match that level of development.
