I thought City Market's was more greasy then Kreutz's, and had a little less flavor. But I've only eaten City Market once, whereas I've had Kreutz's numerous times, so maybe I hit them on a below average day. (To be fair though I've never had a below average day at Kreutz's.)

WRT brisket, I think the Salt Lick's is the best for how I like it: very lean without being dry or tough.

Every Easter my Welito would cook up a bunch of Elgin Sausage among other things. So Elgin sausage is the best imo.

Only took a few pics, almost all of which didn't come out due to the poor lighting and dogshit phone, and we didn't have time to actually start making the sausage, copa, prosciutto, etc. today.

We don't use the heads anymore but we did when I was a kid and I distinctly remember the sound of my dad's buddy cutting out the teeth with a cleaver.

Coopers in Llano has a nice hot pepper sausage though that's pretty good. Haven't tried their New Braunfels location yet.

Best ribs- County Line in Austin

Best all-around - Salt Lick

Smitty's ribs are way better than County Line, and Salt Lick kinda sucks ass. Best brisket is definitely at Snow's in Lexington, their Tx Monthly props are well deserved.
