Arroz con pollo is the shit, as long as it isn't soupy. My grandmother was a terrible cook and her rice and fideo were always soupy and bland, and so I grew up hating arroz con pollo cus I thought that's the way it was supposed to be. Now I love it cus I make it myself and it isn't like opening a can of chicken and rice soup.

Well for me "carnitas" means either beef or pork diced and cooked to a mouth watering tenderness with my secret spices.
I started cooking with my mom when I was young because I grew up in Ohio and wanted to make sure I could eat well if I didn't have a vieja to cook for me.
My wife loves my cooking.

See, I braise mine in a mixture that includes some OJ. But some people look at me like I am crazy. I have seen people fry theirs with orange slices, and others cook it in milk. I can't see how milk is good, cus I use milk or buttermilk for chicken strips, to tenderize the meat. But if you leave it too long it breaks it down too much and then its mushy. So I can't imagine what heat+milk would do.

I remember as a kid dinner meant refried beans with some homemade fries and flour tortillas.

Damn, I miss that kind of stuff.

My dad and brother would load a tortilla with fries and drench some Louisianna hot sauce all over them. I was never fond of that, but every time I smell Louisianna hot sauce it reminds me of that.

this fucking thread made my day. I have a fresh pot of beans at home and some corn tortillas straight from the border from when I went a couple weeks back. I bring back stacks of those things and freeze them then heat them up. Almost as good as the ones my mom makes.

My neighbor has a huge plant growing in his back yard. I've reached over his fence a few times and taken a shit load of them. I've never seen them sold in stores. Back home they grow wild all over the place.

My mom has well over 20 of those plants.

She gave me one when she visited over a year ago but it died.

The best salsa to make with a molcajete is by crushing/grinding tomatoe and garlic with some chile picin (the little round chiles).

I haven't seen any chile picin since I got to San Antonio. Do they sell that stuff in specialty stores, or what?

Try HEB Mercado on Culebra and 24th. They have a shitload of different peppers there, it makes up like half their produce section.

Okay, now that we are talking Mexican, what's the deal with these nopales?? When I was a kid I had a friend from around here, and I'm not too sure, but I think they ate them at her house with beans or with scrambled eggs. I see them at HEB, and I would like to try it out.

Why would they sell nopales? It grows everywhere.

My mom had one in the front yard when we lived in Hollywood, but it never got that big because people were out there stealing the leaves every time a new one would develop. I've seen them get HUGE though.

1 can of whole corn, drained
1 can of diced tomatoes
1 small can of tomato sauce
1 tbs. ground comino
1 tbs. garlic powder
Salt/pepper to taste

Brown pork steak till cooked.
Add zucchini and corn and cover and cook on medium till zucchini is soft and cooked.
Add remaining ingredients

Cook for about 15 minutes…………….ENJOY!!!

We had a big chili pequin bush on the front porch and he told me they were Easter egg seeds and if I ate them now they couldn't turn into Easter eggs. Naturally I picked a hand full and popped them. No need to use zucchini if you are in Texas. Mexican calabacita squash is sold everywhere. I've never done it with meat though. But I do always top it with cheese.

Those are the only kind of enchiladas we have in west Texas---because the chiles come from New Mexico. You can buy those dried in bags anywhere; it's what I use for chile colorado and in tamales. But if you want a really good, and easy substitute, buy a canned brand called Las Palmas. Not as good as homemade, but not bad either.

For awhile it was all the rage to wear your zip code on a tshirt, but around here it was black shirts with white Olde Tyme lettering. Like that kind you see the people in car clubs stenciling on the back window advertising the club. It looked fucking ridiculous.

They sell chile piquin at HEB while in season. I saw it not three days ago at the one on S.W. Military and Pleasanton. The have the serranos and jalapenos and way at the top in small plastic bags the piquins.
