is it just me or has the quality of enchiladas in the SA area gone down a lot in the last 5-7 years?

I'm not even sure who has the best any more. Even Blanco Cafe has disappointed me lately.

Perico's is easily my favorite spot for Mexican food but Im getting burned out.

who's currently #1 for enchiladas?

The guisada is the difference. That is what makes it tex mex. Real mexican enchiladas have only red chile sauce.

Being a Californian, I don't know from Tex Mex, but the enchiladas at my favorite place use a combination of gravy and the sauce from Chili Colorado.

The best enchiladas I have ever had (in Mexico) didn't use red chile. It was an entirely different guisada from San Antonio style, but it definitely wasn't red. I don't know anything about moles though, so I can't tell you what kind.

Good shredded beef/chicken/pork are awesome in enchiladas. Especially if you fry it up on the grill for a minute or two after shredding it.

See I've never had any kind of guisada/meat sauce enchiladas anywhere in Mexico or West Texas. The red enchiladas made with a pure red chile sauce. They do make mole enchiladas most places, and they are delicious, but that's an entirely different sauce (although it is red chile based).

My Sicilian great-grandparents were hilarious. My great-grandfather didn't even have to do that much. If my great-grandmother was awake and not getting her hair done that day, you can bet something was cooking. I think I was only ever in that house twice as a kid without the stove being on and it was just too weird for me to handle.

Hell, their house had three huge stoves/ovens -- one in the kitchen for regular use, one in the back porch that she'd use for sauces and soups that had to cook all day, and one in the basement used mostly for canning.

Types of mole

Mole Amarillo

Mole Amarillo uses Ancho (http://en.wikipedia.org/wiki/Ancho), Costeņo (http://en.wikipedia.org/w/index.php?title=Coste%C3%B1o&action=edit&redlink=1), and Guajillo (http://en.wikipedia.org/wiki/Guajillo) chiles, green tomatoes and tomatillos (http://en.wikipedia.org/wiki/Tomatillo), onion, garlic, clove, cumin, black pepper, cilantro, chilcoxle (http://en.wikipedia.org/w/index.php?title=Chilcoxle&action=edit&redlink=1), and hoja santa (http://en.wikipedia.org/wiki/Hoja_santa) or pitiona (http://en.wikipedia.org/w/index.php?title=Pitiona&action=edit&redlink=1), depending on the type of mole vessel.

Mole de Cacahuate

Mole de cacahuete, or "Peanut Mole", made of ground peanuts and chiles, is typically served with chicken.

Mole Chichilo

Mole Chichilo is also one of the less common moles, with an odd ashy flavor. It has Chilguacle Negro, Mulatto, and Pasilla chiles, tomatillos and tomatoes, cloves, black pepper, and corn dough. Avocado leaves add a hint of anise.

Mole Coloradito

Mole coloradito has a brick red color and a simple taste. It uses Ancho and Pasilla or Guajillo chiles, almonds, sesame seeds, tomatoes, garlic, oregano, cinnamon, and sugar.

Mole Mancha Manteles

Mole Mancha Manteles has a strong Ancho chile flavor and is often used to dress plantains and pineapple.

Mole Negro

Mole negro is the most difficult to prepare, and therefore the most famous. Traditionally, black mole has six different kinds of chile peppers, Chilguacle Negro, Mulatto, Pasilla, Ancho, Guajillo, and Chilpotle, although many sauces that carry the name contain less. The ingredient list is very long, featuring many seeds, nuts, spices, herbs, and chocolate.

Mole Poblano

Mole poblano, whose name comes from the Mexican state of Puebla (http://en.wikipedia.org/wiki/Puebla), is a popular sauce in Mexican cuisine and is the mole that most people in the U.S. think of when they think of mole. Mole poblano is prepared with dried chili peppers (http://en.wikipedia.org/wiki/Chili_pepper) (commonly ancho (http://en.wikipedia.org/wiki/Poblano), pasilla (http://en.wikipedia.org/wiki/Pasilla), mulato (http://en.wikipedia.org/wiki/Mulato_pepper) and chipotle (http://en.wikipedia.org/wiki/Chipotle)), ground nuts and/or seeds (almonds (http://en.wikipedia.org/wiki/Almonds), indigenous peanuts (http://en.wikipedia.org/wiki/Peanut), and/or sesame (http://en.wikipedia.org/wiki/Sesame) seeds), spices (http://en.wikipedia.org/wiki/Spice), Mexican chocolate (http://en.wikipedia.org/wiki/Chocolate) (cacao (http://en.wikipedia.org/wiki/Cacao) ground with sugar and cinnamon and occasionally nuts), salt, and a variety of other ingredients including charred avocado (http://en.wikipedia.org/wiki/Avocado) leaves, onions, and garlic. Dried seasonings such as ground oregano are also used. In order to provide a rich thickness to the sauce, bread crumbs or crackers are added to the mix.

Mole Rojo

Mole rojo is lighter red and spicier than Coloradito. It uses Ancho and Guajillo chiles, onion, tomatoes, pecans, peanuts, sesame, garlic, oregano, chocolate.

Mole Verde

Mole verde achieves its distinctive green color from the toasted pumpkin seeds that form the sauce's base. As well as using ingredients such as Romaine Lettuce, cilantro, epazote, and tomatillos (also "tomate verde" in Spanish).
