I miss home sooooo much (Hometown is SA & Texas is home in general). I live in the armpit of WA state & dying for some good BBQ. They don't know BBQ here at ALL. I can do it okay, but I don't have the time to do it. Lately, been working 10-14 hour days with work. I soooo need a BBQ fix. Though about to do some ordering online from Black's or somewhere, but DAMN they're expensive. Need me some good TX BBQ!

There used to be a great Texas BBQ place in Port Angeles about a block from the ferry; if you are in that area ;)

Start your brisket a couple hours before you go to work, reload wood chips and water right before you leave, set it at 210 and your brisket will be ready when you get home. If you are going to be gone 14 hours use a bigger (14-16#) brisket.
