I love some good tortilla soup.
Even the six can method isn't bad.

# 1 (15 ounce) can whole kernel corn, drained
# 2 (14.5 ounce) cans chicken broth
# 1 (10 ounce) can chunk chicken
# 1 (15 ounce) can black beans
# 1 (10 ounce) can diced tomatoes with green chile peppers, drained

My sister's easy recipe and it's delicious.

All you do is boil a whole chicken; debone it
Cut into piece; not to small
Save all the broth
If you like, chop some onion and add it to the chicken
While its boiling
Into the broth, add two cans of mexican-style tomatoes
That’s about it
You then can add pieces of mozzarella cheese, avocado
and tortilla chips. Garnish with cilantro if desired.

make homemade tortilla chips:

Cuts the corn tortillas into strips and fries them

Would you get the same taste if you just put the tortillas in the soup (instead of making chips then putting into soup)?

I came up with this when I had to get rid of some chicken and tortillas but I didn't want a huge mess:

I added a can of Herdez salsa casera to one can of chicken broth and 2 cans of water, about a cup of frozen corn and the shredded chicken. While that warmed thru I cut the tortillas into strips and baked them until crispy. Then you just place the tortilla strips into a bowl, spoon over some of the soup, and add all the toppings you want :cheese, sour cream, onions, avocado, limes etc. I was surprised what a hit it was at my house :)

Love Tortilla Soup. Gringos was my favorite until they sold the restaurant. My wife recently found a hole in the wall on Fredricksburg Rd. that is the freaking bomb!!

This may be what you meant by Mexican tomatoes, but I love to cook a little bit of green chiles in the stock when I make mine for tortilla soup, along with plenty of onions. After that I keep it simple and put some chunks of corn on the cob in and whatever I'm in the mood for. I prefer mine without the canned tomatoes but I like some chopped fresh tomatoes and avocado and cilantro as garnish. Don't laugh but Taco Cabana makes tortilla soup when the weather turns cold and it's very fresh tasting and really hits the spot.

You put strips of tortilla chips on top of your bowl as a garnish; you don't cook them in. That would make them soggy.

My favorite is HEB's tortilla soup kit, it's kind of spicy and so yummy. I've been trying for months to replicate it without the kit (because it's freaking $10!!!) but I can't get the spices just right.

I've had Chacho's but it has too much cilantro for my tastes, Red Robin's is decent surprisingly, Don Pedro's isn't spicy enough, and TC's is pretty okay. I'm going to have to try Jim's though!

My recipe is kinda like panda Spurs just a few differences like I add chicken bullion and I use Monterey jack cheese.
