So I want to have nachos today or maybe tomorrow, you know chips, beans, cheese, etc.

What do you guys put in your nachos and or share your recipes.

Sprinkle some real bacon bits and some banana pepper slices. For a real fresh taste get yourself some real jalapenos, don't de-vein them, slice them up and lay over your nachos. :hungry:

Nachos originated from the town that my mom's side of the family is from so they still make them the original way. I like them with cheddar, guac, beans, either seasoned ground beef or chicken/steak fajita meat, jalapenos, and maybe some queso blanco.

I use chedder for the most part but I do like monteryjack cheese.

For meat ... budget wise = seasoned hamburger meat
Splurge = beef fajita

I like seasoned ground beef, refried beans and jack cheese on my nachos. I also prefer a real chunky pico de gallo to the pickled jalapeno slices. And a little sour cream. NO to the guacamole :nope

Yeah that is where my family is from, Piedras Negras. They are too plain for me though. I like the Americanized version with all the junk on it.

What I prefer on my nachos is:

refried beans
diced up chicken fajita
pico
and lots and lots of cheese. Cheddar preferably. Not that nacho cheese crap. Yuck.

And, dare I say, sour cream on the side.

With a couple of tortillas de harina to make nacho tacos. Good stuff. :tu

The jalapeņos have to be raw. Even better is serranos though.

I use cheese (usually provolone, co-jack, or swiss, but fontina melts amazingly well, so I use that if I can get my hands on it.) bacon (I prefer to cook the bacon rather than use bits, but I've been known to use them), and whatever other meat I have in the refrigerator.

I tried it once for shits and grins at a party I hosted about 6 months back. Was apparently a hit because I was out of provolone by the end of the night.

Sort of. We made the nachos in batches, using one cheese to a batch at a time to start with. As the night went on, though, we ended up with one batch that had bacon, chicken, steak, and, IIRC, 7 different cheeses in it.

hmm. i like cheese, but i don't know about provolone on nachos. kinda like making a pancetta and egg breakfast taco.

I use cheese, fajita meat, the blood and skin that collect from under my fingernails after scratching my face, my girlfriends tears, anger that I have built up towards my parents, hair clippings from my emo haircut, and I sprinkle Fuck as loud as I can on top just for heat.Oh the cheese I use is provolone

I rarely make nachos, but when I do it's similar to when I make pasta -- what I put in/on them depends entirely on what I have in my kitchen at the time.

For quickie nachos, I just go with chips, cheddar cheese and hot sauce. If I'm taking time to make them, I use ground beef cooked with diced green chiles, little bit of taco seasoning and hot sauce. I use cheddar and pepper jack cheese. Olives, sour cream and sliced jalapenos and it's ready to go. I've served them this way a few times and I've had good reviews from people every time.

I'm not a big fan of the cheddar on nachos. Too stringy and tough. American cheese or velveeta for me.

I also like using Julios chips as the base.
