Jailbreak

So I finally got my iPhone 3gs jailbreaked. Jeez, it really, really makes a difference.

I've got all the basic stuff like Cydia, Installous, Winterboard, SB thingy etc etc..

I want to make full advantage of all this free stuff, so could people give me some lists of their favourite apps and tweaks that you can get of installous and cydia?

Also, is there a phonecall recording app available?

Just a simple one, no going through other services etc.. I do a lot of interviewing, and it's ridiculous I have to use my 4 year-old Nokia to record the interviews over my iPhone.
