Sometimes I'll add pork or beef but generally just have it plain.

diced sausage ( 2 or 3 links of the HEB jalapeno and cheese smoked sausage works great) and mixed veggies. I'll brown the fideo and sausage in a little olive oil, then add a can of hatch tomatos and green chilis, another half can water or chicken stock, then right towards the end add a half bag of frozen mixed vegetables and simmer till most of the liquid is absorbed. It's a kickass one skillet meal with a prep time of about 10 minutes. It's my go to meal when I'm flying solo at the ranch.

The "enriched" part on the box is confusing me.

I like it by itself as a side dish and not the soupy version. Though, I've had it with albondigas as a soup and it's pretty good.
I usually toast it in sesame, peanut or canola oil until it's good and evenly browned. The toasting is key. Then I add onion and diced tomato. In a molcajete grind garlic, salt, pepper and cumin. Add a little chicken broth to it to loosen the garlic paste and add the mixture to the toasted fideo. Then I add enough broth in the pan to simmer it.
Basic and badass.

No meat in mine. With plenty of comino.
I like it mostly as a side dish. But I've made SpursWoman's recipe as a main dish and it was great! :hungry:

My kids refer to it as Mexican spaghetti and love it ... I just had to take some turkey out of the freezer so I can make it this week. Now I want it! lol

Hmmm, never thought of making it with turkey.
I like mine a little soupy too, lots of onion and green pepper.
This was a regular meal in our cheap household growing up. :lol

my fiancee makes it with either bits of pork or with ground beef. It always taste best when its soupy! Then I either add sour cream or ranch to it after I come from taking some bong hits from the laundry room. oh, and don't forget the garlic bread to accompany it!:toast

I was planning on salad, but that's an option. :lol
I asked DH to pick up some tortillas when he went to Costco, and he came home with some bigger than the size of your head. :wow

Right, it's just something that has the fideo pasta as an ingredient. But it does look like a satisfying skillet meal and I like the idea of something like that with rice. But I'd go with less "jalapeno this" and "green chile that"; I like that stuff but not necessarily in everything.
