Shark or Tuna steak as well. Mahi-Mahi too. I'd stick to one of those 4 unless you really enjoy Salmon or something like that.

I really like Salmon, but I have the luxury of being able to buy it cheap from the Indians that fish out out of the Columbia too.

I've only had it once, but I'd go with DPG on this one. Chilean Sea Bass is pretty awesome.

I fish pretty much every weekend during the summer in Mexico. Out of San Diego we get dorado, yellowtail, yellowfin, bluefin, albacore, and various sharks. I've eaten it all raw on the boat and cooked. Dorado was my favorite. Recently tried monchong while in Maui at a place called Merriman's. unreal fish, best ever.

When it comes to seafood I tend to be pickier about how it's prepared (the simpler the better) and how fresh it is than I am about what type of fish it is. Other than shellfish, which I hate (and to which I am very mildly allergic), or the little oily ones like sardines and such, I've yet to encounter a fish I can't like. If I were to pick a favorite, though... off the top of my head I'd probably go halibut.

Swordfish is good. Red snapper, cod, halibut, sea bass, eel - all these are tasty.

When it is in sushi I think freshness is paramount.

I've been called pretentious by a number of people ONLY on this particular online message board. Usually in regard only to the fact I use big words and proper punctuation. Usually when the person calling me pretentious is in the midst of an extended hissy fit. And only by people who have no idea who or what I am as a person.

Again, why would I care even half an iota about that?

CuckingFunt is accused of being pretentious by a bunch of pixels. I, however, do not "come off as pretentious to a bunch of people." Based on your posing habits, I would not be terribly surprised if you didn't see the difference between those two statements.

I am often seen as pretentious. Now sometimes, I do make misjudgements and say more on topics I am not so familiar with. It has caused people to jump to the conclusion I don't know what I speak of, and I make it worse by not clearly stating between opinion and fact. Now CF and I have had some serious differences, but this is completely unwarranted, in this topic of personal preference. That said, it seems to me that CF is far less pretentious than most in here, including the two of you on her case.

It does, actually, have a lot to do with my use of big words and proper grammar. In a written forum, that's all it could possibly be based upon. Well, big words or a snotty tone, but the accusations of pretentiousness seldom follow the posts in which I'm outright snotty or bitchy, so I'm left to assume my tone has very little to do with it.

In order for you to know that the importance, talent, culture, etc., I supposedly affect is greater than I actually possess, you would have to actually know me. You don't. No one here does. At most all you or anyone else here can do is accuse me of affecting a greater importance/talent/culture than what you assume I possess. Which, again, I'm finding it hard to see the reason I should give a fuck, let alone be concerned about how I'm coming off to people.

And of course I am not as a person who I am in my posts here. While I agree with and stand by everything I've posted here over the years, whomever CuckingFunt is represents, at the VERY most, about 10-15% of who I am as a whole, real life, actual person. I hope, for your sake, that's true for you, too. And for everyone else. It would be flat out sad to learn there wasn't more to you than what you present here.

Rather, I was commenting on the fact that your posting history has repeatedly shown how seriously you take this place, and your standing within it, making it understandable that you would fail to see the separation between me, as a person, and CuckingFunt, as an online persona, or the fact that I am not (and should not be) hurt by baseless insults thrown at the latter.

I love pretty much any fish, but salmon and halibut have to be my top 2. New Zealand blue cod is amazing too. Fresh flounder down in Port Aransas is also the shit.

Sea food…Fresh ocean fish with scales are your best choice…Alaskan Halibut is tasty but only harvested in the summer months…Swordfish is the filet mignon of the ocean & is rarely offered in restaurants or grocery stores anymore…

In Cali a Yellowtail or Dorado caught & bar be qued that day is as good as it gets…

Back to the OP...

Different fish are better cooked different ways...

For grilled, I personally think sworffish is the best, but I quit eating it several years ago as they are almost endangered now...tuna is also great grilled as it is a firm textured fish. Shark is good grilled too.

If you have never had pepper crusted tuna steak just flash seared on a flatiron to rare/medium rare it is freaking heavenly.

Mahi-mahi (the one they have posted pictures of) is a little more delicate and better sauteed or blackened or served with a simple sauce.

CF's suggestion of halibut is excellent as well if you want a really delicate white fish...in Texas flounder cooks just like halibut it's just a smaller fish and the cuts are typically not as thick...both are great poached, stuffed, or sauced with a light sauce...

I have recently been dry rubbing and then smoking salmon on my big pit in the warmer at about 150F and results have been freaking spectacular...I'll leave it on there 4 or 5 hours skin down until it flakes off the skin easily...

Tilapia is a relatively cheaper alternative commonly available but really need something like a sauce or heavier seasonings...the fish has essentially no taste of it's own...

Orange Roughy (slimehead sea perch) have pretty well been wiped out. A lot of other cold water fish (haddock, etc.) were served in restaurants as "Orange Roughy".

Grilled redfish on the half shell is damned good too. I'll cut the fillets off leaving the skin on...then grill skin side down on medium heat covered in thick and chunky salsa...the salsa juice infuses the fish, hits the skin and steams back up throught the fish..just grill/steam till the fillet flakes...when it's done I'll just take a spatula and slide the fillet off the burnt skin and plate it.
