Because normally you don't get any clouds inside of a well formed eye wall.
Wrong. You almost always have some cloud formation within the eyewall unless the subsidence is extermely strong. And even in that situation, there are low level clouds on the outer portions of the eye.

But either way, the eyewall of Wilma at that point wasn't well formed. It was a wide broad eye that was pretty ragged as far as defenition goes. It had independet vorticies within the eye much of the time after it gained its maximum intensity.

It's a weird coincidence, but thats about it.
