View Full Version : Judy's Livin Large on a Small Budget tips and tricks to help you enjoy life like the wealthy

Les made the mistake of letting the Blessings try sushi. And they loved it.
But it's super expensive so I've come up with my own homemade sushi recipe so
you can Live Large!

Ingredients:

6 catfish fillets
6 tortillas (flour or corn)
3 cups Minute Rice
Lettuce
Canned Olives (sliced)
Onions
Mayo
Mustard (squeeze bottle)


Now, you can find reasonably priced catfish at WalMart. But we will usually catch ours from one of the public fishing ponds. It only costs $10 for a day and you can easily end up with about 20-30 catfish. These can be frozen and used as needed.

1: cut the catfish into long strips using your scissors
2: lay out the tortillas (I prefer corn because they're thinner like the store bought sushi wraps)
3: place two strips of catfish in each tortilla
4: place shredded lettuce in tortillas
5: put rice in each tortilla
6: roll up tortillas
7: squeeze a line of mustard down the top of each roll
8: cut the rolls into 1/2 inch pieces
9: place a couple of olive pieces on top of each roll piece
10: place a dollop of mayonnaise on top of each piece.
11: serve chilled along side a scoop of grated onion (the consistency will be similar to the little tan stuff they serve with it normally)
12 : ENJOY!

Note : If you're like my husband, you will want to microwave your sushi for 30 seconds on high. He also likes to melt a piece of American cheese on top. Although that's not really how the Chinese do it.

Judy can you give us Larry's famous minced steak and cheese recipe?

If my memory serves me right, I believe it was something like a piece of well done steak, chopped up with scissors, covered in american cheese, barbecue, and ketchup. Or something to that extent.

My God, arguing over steak, haha~~~

I take a pair of scissors and cut my steak into little (tiny) pieces after it's been barbecued***. Then I toss it in a bowl with hot mushrooms, melted cheese and Teriyaki sauce. Shake it all up then dump the mix onto barbecued (close to be burned) french toast, yep......yum-me. One of my grandpa;s taught me this, he was from Arkansas.

Would never give that up for a restaurant steak.

Frosty mug beer time, so cold ya get brain freeze.

*** constanly pouring melted butter over the steaks as they cook.

EDIT: My God I just actually read that abomination. Think about it.

Surely a cheap piece of burned gristle covered in american cheese, barbecue sauce, teriyaki sauce served over a burnt piece of white bread. Trailer park cuisine at its finest :lol

Well, Father's Day is just around the corner. And you don't need to break the bank to show your appreciation for that special man.
Here are some great idea's that can help you celebrate Father's Day while
Living Large!

1 ) Bless the Day! stickers.
Cut pieces off of a roll of duct tape and write bible verses on them. Then stick them in places where your husband will come across them throughout the day. I like to stick them inside Larry's socks and underwear. On the car mirrors. In between the slices of bread in the loaf. Use your imagination!

2) Freshen up his life!
We normally just wash clothes once every couple of weeks so for this special day, I like to give my man a fragrant lift. And all it takes is a couple of cans of Glade. I'll spray down his jeans, t shirts, and underwear with different flavors of Glade. Although if you want, you can have a motif and just use one kind. Last year, I sprayed his clothes with Hawaiian Breeze. It was just like I thought a Luau might be.

3) Music to his ears!
This might not work for everybody but Larry listens to a lot of tapes. He likes to record songs from the radio on to cassettes. I'll just randomly record myself saying "I love you" in the middle of the songs.


4) Make a cake!
I know what you're thinking...mix, eggs, milk, butter...Judy, I'm not a millionaire! Take a breath. Here's a recipe for a milliondollar cake that won't cost you and arm and a leg.

Ingredients:

1 loaf of Wonderbread (or your preferred white bread)
3 cups of sugar
1 cup of maple syrup
1 cup of chocolate syrup (optional)
1 box of your choice of cereal (Larry's favorite is Trix)
1 can of Rediwhip

Take the bread and place in a large mixing bowel.
Add 1 cup of water.
Mix until doughy.
Mix in sugar.
Mix in maple syrup (or chocolate syrup)
Now add in your cereal and mix with hand.
NOTE: Do not use a mixer for this step as it can crush the cereal.
Place your dough mix in a bundt pan and freeze overnight.
Next day, remove cake and thaw for 2 hours.
Add Rediwhip.
ENJOY!

Variation: If you're partial to cheesecakes, substitute 2 jars of Velveeta cheese dip for the maple syrup. Note that this will increase the total cost of your cake.

Judy's Famous Pizza Lasagna

Lasagna can take a lot of time and work and not to mention all the different ingredients. I have my own quick and cheap version that I just
whipped up for Dad's Day and thought I'd share so you can.....
Live Large!

Ingredients :
3 Totino's Pepperoni Pizzas
NOTE: you're welcome to use your own favorite flavor. You can even put a twist on it (like I just did) and use three different flavors. Have fun with it!
1 loaf of Wonder Bread (or your preferred white bread)
1 family size bag of cheese puffs
6 pieces of American Cheese
6 ounces of spaghetti noodles (uncooked)

1) cover the bottom of a glass baking dish with the Wonderbread
2) cover this layer with uncooked spaghetti
3) place one of the pizzas (uncooked) face down on the spaghetti
4) cover the pizza layer with cheese puffs
5) Repeat 2 more times. At this point you will have three layers.
6) place American cheese on top

Place in microwave on high for 5 minutes.
Let stand for 2 minutes.
Add a cup of water to your lasagna (this helps the spaghetti cook)
Microwave on high for 8.5 minutes.
Remove from microwave and let stand for 3 minutes
Slice your lasagna.
Remove the edge pieces. They are ready to enjoy!
Place dish with inner pieces back in microwave for 3 minutes on high.
ENJOY!
