Try carbquick, stuff is gluten free and I've used it as a base to fry fish and chicken and made waffles n pizza crust with it. Can make donuts with it. Promise you, it will change your life if your cutting carbs or glutten.

udi's is everywhere there is GF options from 54th street to wholefoods made fresh sandwiches. i'm not totally against udi's but i'm not a fan of it either and yes it falls apart pretty easily.

mellow mushroom makes a great crust of their own but it's expensive.
