To me, Sotol is much smoother than Tequila. If you can find some, I highly recommend it. A buddy of mine brought me some back from Mexico this week. I had never had it, much less heard of it and was pleasantly surprised.

Sotol? What's it made from? Hell yeah I want to try it. My woman is going to Mexico City to visit her mom and grandmother on the 21st. I'm going to ask her to bring me back a bottle.

When I researched it, it is made from wild agave from the high Chihuahuan desert. It is a ton smoother.

Although Tequila's alcoholic goodness has gained a worldwide reputation, few people have heard of its close cousin, sotol. Sotol, along with tequila and mescal, is made from a plant of the agave family. Unlike tequila, which is made from blue agave, sotol is distilled from the agavacea dasylirion, a smaller plant that grows in the mountains and deserts of Chihuahua. Agavacea hearts are cooked, shredded, fermented, distilled, and finally aged from six months (reposado sotol) to over a year (añejo sotol).

Local Indians first discovered sotol's magically intoxicating properties over 800 years ago; it didn't take the Spanish long to realize this as well, and, with the aid of European distillation techniques, they helped to enhance the purification process. Despite having been enjoyed for centuries in the haciendas of Chihuahua—indeed, many families brew their own crude version of the drink—sotol has only recently begun to achieve international recognition.

Sotol admirers claim that it has a smoother taste than its better-known relative. But perhaps the sotol's strongest selling point is its price—a bottle of top-notch sotol costs only a fraction of the price of similar-quality tequila.
