Depends on the quality. If it's a good filet, very rare. If it's a t-bone I'm using to make tacos or something, medium. I never get a steak anything more than medium though.

I guess I'm a cave-woman then. :lol I like my steak medium rare to rare. I can't stand over cooked meat. I detest going to restaurants now and having them tell me they won't cook anything under medium well. If they want my money then they will. They usually give in if you are nice enough.

Anyway, yeah LJ gets pissed when they say they can't cook medium rare or rare too.

imo, there is no taste in a steak cooked past medium rare. frankly, i don't know how people eat them...gross.

I don't like dry overcooked meat ... but no way could I eat some raw uncooked flesh. It amazes me when I see people eat it cooked rare.

Medium rare. If it's a hamburger, medium well. Anything else is just too dry, why bother?

I can't eat steak around my sister, she sees pink and she grosses out and starts making all kinds of rude comments about how I am gonna get mad cow disease. It's very disrespectful--I don't make fun of her for ordering a hockey puck to eat.

I usually buy restaurant grade prime steaks for cooking at home and if you like your steaks well done you are shit out of luck. I refuse to ruin a great steak by overcooking it.

A lot of restaurants substitute lesser cuts of meat on well done steaks (choice or select instead of prime) knowing they won't be able to tell the difference after it's cooked to a crisp.

I like my steak run through a warm room. As rare as it can get.

I love the Steak Tartar at Liberty Bar. I went there with some coworkers last week and they freaked out when they saw my plate was basically raw meat with a raw egg on top.

We always try to keep parisa at the ranch I guide on. We get hunters from all over the country and we always have to play that game of "just taste it before I tell you what it is"...they all end up raving about it, even some of the "well done" guys...

If a restaurant tells you they won't serve steaks cooked less than medium well I would not order a steak... there's got to be a reason why they won't and I doubt it has anything to do with a stubborn Chef. My guess would be they are concerned about food borne issues that won't be cooked out if it's not cooked to a certain temperature.

There is this fantastic French restaurant out in Castroville that always refused to serve anything above medium for their beef, becaue in their words "we can't justify the quality of burnt meat." In other words, if you insist on ordering it above medium and don't like it, you are SOL. It's kinda funny how snotty they are about it.

Actually, to be specific, I like my steak free of fancy marinades/sauces (a little pepper, a few herbs, and sea salt is all you need) and taken off the grill during that two seconds of sublime perfection when it's fully cooked, but still juicy. Heaven.

The thing I don't like about getting steak and lobster together is that they only give you the tail of the lobster usually, when the claws have the best tasting meat IMO.

i suppose its a matter of preference, but personally i find it disturbing sitting across from somebody whos steak looks like it is still alive. blood dripping down ones chin has never been especially appeatizing to me.

I disagree. The tails are better tasting to me. Of course if you get Australian Rock Lobster there are no claws.

I've never had any seafood that can compare to Maine lobster, and I've always found the claws to have sweeter meat than the tail. I've never tried Austrialian lobster though. What's the difference in flavor between it, Maine lobster, and Baja spiny lobster?

a touch of basalmic on top a few hours before with those herbs, or even a touch of angostura bitters instead of basalmic. hit it with sea or kosher salt and some freshly cracked pepper before it hits the grill. rare if i'm eating alone, medium rare if my wife isn't working (she doesn't like to see a lot of blood in my food). i don't order steak in restaurants, i can cook it better at home.
