That sounds like how my mom makes it...but she uses the Pepperidge Farms seasoned cornbread crumbs....it's unreal. :)

I do two parts...the cornbread/celery/onion/pepper/butter/sage/broth dressing and then a seperate "dressing gravy" that starts with a roux of butter/pan drippings and flour then add cooked diced giblets and broth to the right consistency...

I can't cook so I take the easy, yet quite tasty, way.
I haven't had a man complain yet...but that may because of what they get for dessert.

I would subtract the cornbread and add mushrooms and wild rice.
Very delicious.
