View Full Version : KILLER Cheesy Potatos?

...could be the mother of all Cheesy Potato recipes:

2 bags Tater Tots, thawed
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1 can Campbells Fiesta Nacho Cheese (found in the soup section)
24 oz. sour cream
1 pound mild cheddar cheese, grated
one onion, diced
1-1/2 tsp salt
one cube (1/2 cup) butter or margarine

Mix all ingredients except 1/2 the grated cheese and butter.

Pour into a buttered 11x13x2 (or similar) dish.

Top with patted butter and the remaining grated cheese and cover well with foil. Note: If possible, allow the dish to marinate a couple hours before baking.

Bake @ 375 for 60 minutes.

P.S. Because we were short 8 oz. sour cream (the recpie calls for 32 oz), I substituted the Campbells Fiesta Nacho Cheese. Otherwise, I would have added some pepper.

Im making my jambalaya sourdough sandwiches today.

3 links of andouille sausage
half of a smoked sausage
3 chopped boneless chicken thighs
1 pork tenderloin sliced into 1 inch cubes
2 diced shallots
1 diced red bell pepper
3.4 cup of chopped green onion
1 package of sliced havarati cheese
3.4 cup chopped parsley
2 teaspoons of cayenne pepper
2 teaspoons of kosher salt and freshly ground pepper

few slices of thick cut hickory bacon


render the bacon in a cast iron skillet or deep skillet, then put in the pork tenderloin. cook till brown

add in the bel pepper shallots and sausage
cook till onions are tanslucent

then add in the chicken parsley green onions

cook till chicken is cooked through, then add in salt pepper and cayenne pepper

cover, and let sit for 1 hour

slice a loaf of sourghdough in half

butter up, and then bake until cooked.

open sandwich, put down on both sides the havarati cheese

then put in the sandwich the jambalaya

Lets have a little fun. Its a holiday, celebrating the very best country in the world, so lets be gluttons for a day

of course on my diet i cant have the bread, but i get the rest of the meat :)

Yeah I cook pretty much everything I eat now, I go to whole foods market, get organic and other good stuff.

So yeah the potatos would work, but theres these boiled potatos i make, and you put this bag of crab boil in the water, let it cook, then those spices get on the potatoes, then you toss em with sour cream, cheese, scallions

boiling potatoes takes quite a bit of nutrients out of them, steaming is a lot better.

i'm cooking orange chicken and white rice.


buy a 13 dollar box of orange chicken at costco.


put the chicken on a baking sheet with foil.

when the chicken is done, stir in the orange sauce and let put the oven on warm.

white rice? 3 cups rice. 6 cups water. a stick of butter. some salt. stir the shit. when it boils? cover the shit and put it on low.

check the rice in about 15 minutes and if all looks good, fluff it up and serve with a beer.

It was definitely rich...I didn't like it. Too much like an overdone caserole.

Everyone drinking massive amounts of alcohol liked it. :lol
