Freetail will be second S.A. brewpub

Scott Metzger wants to wow San Antonio residents and visitors with fresh beer from a brewpub in the fast-growing North Central part of the city.

Freetail Brewing Co. is slated to open in the second quarter of 2008 on the northeast corner of Loop 1604 and Northwest Military Drive in the Hill Country Plaza retail development now under construction.

Metzger, an economist at Valero Energy Corp., took up homebrewing with his father about six years ago after world and domestic travels exposed him to great beer. Now he lives across the street from the Flying Saucer Draught Emporium and is slowly amassing brewing equipment and recipe ideas.

Metzger said he plans to have eight to ten beers on tap created by him and a staff brewer. He wants to do at least three Belgian styles, some barrell-aged brews, India pale, golden ale and wheat beers. "And Imperal IPA, I can't get enough of them," he said.

He also will have Texas-bottled craft beers on hand from breweries such as Real Ale Brewing Co. from Blanco and Saint Arnold Brewing Co. from Houston. He also will seek out the best offering from Texas wineries. "I'm a proud Texan, just like all Texans," he said of the selection.

Freetail gets its name from the Mexican free-tailed bat ubiquitious in South and Central Texas. The original name was Wandering Butcher -- "metzger" means butcher in German -- but he ultimately decided to use a name that tied the brewpub to the region.

While the brews will be the star of the show for most beer enthusiasts, Metzger said he will showcase food from a wood-fired pizza oven.

"I'm a man of pretty simple needs," Metzger said. "I like beer. I like pizza. I like sports. But I like some of the finer things too. People should be able to get a pepperoni pizza, but they should also be able to get a spinich and artichoke pizza."

Since The Laboratory Brewing Co. shut down in the Alamo Quarry, the only brewpub in San Antonio is the Blue Star Brewing Co. Joey Villarreal has kept the spark alive for more than 10 years with solid brews that include hand-pumped, cask-conditioned ales and a big, big barleywine available year round. But with most of the upper-income population growth in North Central San Antonio, another brewpub was needed to spread the gospel of fresh beer.

"I hope to spark a little beer revolution in San Antonio," Metzger said. "If I'm successful, it's only going to make Joey (at Blue Star) more successful and the brewpub in Boerne (Dodging Duck Brewhaus) more successful."

Villarreal agrees. "It's good for the city, and good cities have good brewpubs."

Prosit!

best of luck, hopefully in a few years san antonio's brewpub scene will be on the up and up like here in austin. the texas wines should be a nice touch, there are some good ones out there but unfortunately a lot of the restaurants around here don't carry as many as they should/could. if i'm not mistaken, Texas is the largest importer of Californian wine in the US.

FWIW, ten brews is probably a bit ambitious. One of the best/most successful microbreweries in the area, Fredericksburg Brewing company, I think has maybe 7 or 8, and they only keep 4-5 on tap at any one time. Best of luck, scott. :)

Wow! Thanks JB for posting this! I didn't know it was also running in this morning's Business Section... I thought it was just going to be a blog posting.

This is basically what I've been up to for the last year, and it excites me to see other people get excited.

Thanks for all of your support and I look to be serving you a pint in the near future.

How can a city the size of San Antonio have only one brewpub? That's pretty surprising to me. I've lived in much smaller places with many different options.

I guess that bodes well for you, Scott. If I ever make it down to SA, I'll be sure to stop by for a beer. Best of luck.

Hey everyone, happy Holidays. We are indeed open and have 3 of our brews on tap right now and may be putting a 4th on tap when we re-open on Friday (closed the 24th and 25th). JB stopped by last night with some friends to watch the game - I hope they enjoyed themselves. Make sure to say hi if you drop in.

Peace,

Scott

It's a good spot and my friends liked it, too. They didn't try the beers, but the pizza looked good (I got the chicken caesar salad). I really wish Scott and his crew the best.

I know we'll be back and I plan on taking some work buddies once the holidays pass.

Which three?

Right now we have La Rubia (our blond ale), Rye Wit (a Wit in the more in the tradition of the Hoegaarden/Celis White style), and Torpor Porter. Freetail Ale is the next to roll off the line - it's an amber with an assertive hop bite, much like an Alt.

We've also brewed Old Bat Rastard, our barleywine, a mild from the second runnings of Old Bat Rastard, and Threetail, a Belgian Golden Strong ale.

Several TVs around the place but they are a little smaller so you'll want to sit close to one of them.

For you beer lovers who enjoy high gravity beers, the La Muerta and the 4Shadow are fantastic.
