Strange question. I don't know of any movies, but Sarah Shah did an interesting documentary a couple years ago.

Don't know about movies, but the best book I've read on the subject was "Oh, Jerusalem" by Dominique Lapierre.

Not exactly a movie, but PBS series:

The 50 Years War - Israel & The Arabs

The only mainstream Hollywood movie I can think of is Exodus with Paul Newman. It was about the great 1947 land dash.
