One of the challenges in teaching applied science (especially one as esoteric as MRI) is that there is a dearth of available exercises and you wind up spending an inordinate amount of time thinking up problems of appropriate/adequate difficulty.

I'd think you could go to Jackson. I might be mistaken, but as I understand it was built as a bridge to graduate level E&M. I'm biased though: I'm not in love with the methodologies that Griffith employs with it's examples. They're much too basic and don't really give one a good feel for where to go for a solution.
