2003 Spurs was stellar but the 2004 Pistons were ungodly

04 Pistons and 08 Celtics are two of the best ever, possibly THE two best ever championship-winning defenses. Hard to say which was really better.

What helped the Pistons was their grindout style of offense which really helped slow the game down and keep opposing defense out of a rhythm. On the other hands, the Celtics had a more lethal offense that often would get them big leads, resulting in the opposing team shooting faster, less smart shots because they were often down early forced to come from behind.

Pistons probably had a bit more of a defensive focused mindset, while the Celtics were more focused on balance. If you wanted to pick a defense to stop a team for just one play, I'd probably go with the 04 Pistons. But for an entire game, I like the Celtics defense, because they had more size and length, and because the Celtics lethal offense made their defensive style even more effective.
