covering when refering to anything means performing a song that somenoe else wrote/performed first.
IE Jimi Hendrix covered Bob Dylan's all along the Watchtower or Stevie Ray Vaughn Covering Hendrix's Little Wing.
It is basically just doing someone else's song, its not just a guitar thing.
