There's a place I like to eat breakfast here that has a dish called "papas con la casa" or something like that. I just ask for the "papas" and they know what this gringo is talking about.

It's a huge plate piled with homemade hash browns and in the hash browns they put bacon, ham, breakfast sausage, and cheese, and they drop a couple of eggs on top and the whole thing is covered with a great green chili salsa. The plate literally must weigh three pounds with everything they pile on it. Delicious!! I'm getting hungry just thinking about it!
