    Hmm. I just read about it looks pretty bleu cheesy to me. Is it mild in comparison?
    It's a good intro to bloomy rind cheeses. Goes great with Hefes, Pales, IPA's, stouts, almost anything. Really good with prosciutto and pear/apple too.

    Aged, hard cheeses like cheddar, parm are good for IPA's. Really creamy cheeses are good too, the IPA cuts through the fattiness very well. Bleus are great for them too if you like them. I could ask my gf for more pairings when she gets home this evening, she works at Antonellis.
