I'm not sure how big the Turkey at my house will be, but i have a fun story to share.
My Mother used to teach a Weight Watchers class and she told her class to eat slowley during the first 20 minutes of their meal, because after 20 minutes you start to feel full. So as a result of that my brother and I came up with a mantra that we repeat before every Thanksgiving meal. That mantra: "The first 20 minutes are crucial". We set a timer and eat as much as we can in the first 20 minutes of the meal. Knowledge is power... and can cause severe heartburn.
That's when mouse took over.

seriously...I am smoking a 20 pound turkey on the watersmoker with rosemary and pecan wood...that plus a ham for about a dozen people...
Deep Frying about a 12 lb'er!!
I quit frying turkeys about five years ago when it got the be the "cool" thing to do hehehe...it is a royal pain in the ass for just one bird coonsidering you have to buy 4 or 5 gallons of oil for a medium size bird...I would do several at a time for us and friends...
I love fried turkey!! We got our complimentary HEB 20 lber.
