Why use the lean meat as opposed to a 80 20 ground mix, or a half mix of 80 20 and ground sirloin?
Actually I used 2# of 80/20 and 1# of 85/15 ground chuck. Just a random decision at the meat counter. Smoking it slow the excess fat slowly drips off but still leaves tons of flavor.
Next time I fire up the pit I'm gonna try a turkey meat loaf. I will probably add some fresh shredded cheese to the mix to help keep it moist.
