Thanks but I knew about the nitrites and all that. I'm just asking about straight up pork. Pork tenderloin, shoulder, etc.
I was actually meaning to cure a pork belly with that safer method of salt and sugar lately. Anyone here done that? Seems easy. Season it, wrap it and put it in your fridge for about a week.

LOL cmon guys pork has alwayssss been bad for you. There is evidence to show that humans are supposed to be vegetarians, but I could never go for that. Seems to conflict with the thinking that oils from fish are essential for health as well. I'd like to try a mostly raw food diet with fish as the only meat but I can't begin just yet.
Ok............but since when did pork go from "the other white meat" to red? Like I've said, I understand about the nitrites for store bought Bacon. I'm not speaking about Bacon in particular.

I had three sisters. My parents and I and two sister all eat whatever we want, red meat, fried food, you name it... , my parents are in their 90's and still going strong...mom was cooking dad a batch of beef ribs last night...you don't get any redder/fattier than that. I had one sister that was pretty much a vegetarian and watched everything she ate and she died of cancer two years ago.

It has always been a red meat, the pork industry was just very good at marketing. This is based on its myoglobin amount, which is slightly lower than beef, but much much higher than chicken.
Ah. Ok. So its the myoglobin count they look at. I have no idea what that it but that's good to know.
No, there isn't evidence that humans are supposed to be vegetarians. The evidence they claim lies with our intestines being too long for carnivores. Except that carnivores eat their meat raw and we cook ours, so it's a little better. However, herbivores have much, much longer intestines than we do, and in some cases, multiple stomachs. Not to mention what our front teeth are designed for.
Humans are supposed to be omnivores. Having a balanced diet with exercise is the best diet of all.
If Eve wasn't a damn vegan and gave Adam that apple you'd be much better off.
