Honky breakfast taco tbh. Better are:

1. Machacado con huevo a la Mexicana - beef jerky finely shredded, eggs, serrano, tomato, onion, cilantro, garlic; awesome with arbol+tomatillo salsa
2. Barbacoa - facial cow meat, onion, cilantro
3. Chrorizo & egg - chorizo (sausage flavored with achiote) and egg; gotta top it with tomatillo+serrano salsa verde
4. Chorizo con papa - chorizo and potatoes
5. Carne guisada - beef tips in a gravy made with onion, tomato, bell pepper, black pepper, and I forget what else
6. Migas - Like #1 but without the beef jerky
7. bean & cheese - fried pinto beans mashed up with cheddar cheese. Great if the beans are done properly.

I prefer Ham, Egg, Cheese, and potatoes in my heart cloggers. Whenever I order at one of the "Taqueria Jalisco de __________'s" around town the waitresses always have a hard time wrapping their heads around that .. ed up my order many a time.

Damn, Jimmy Dean sausage gives me monster s faster than any breakfast taco I have ever eaten. Can't believe no one outside of South Texas eats this great (I know, lol beanurs, fat es at the Riverwalk, etc.)
