Because we're largely undefeated in these situations... but this aint the Spurs of yesteryear.
Over the last 12 seasons the team to win game 3 wins the championship 92% of the time.
The sole team that won game 3 and lost the le was the 2011 heat vs Dallas.
Your theory would hold true if game three was in Miami. The next three games (which will all be played), are in San Antonio. A Spurs win gains momentum for the next game and so on, until the series shifts back to Miami.

The Mavs also made some major adjustments post game 3 that helped them not lose the series like starting Barea and not playing Peja. The team that adjusts better is going to win. These teams haven't really played each other much at full strength so game 1 was a feel out game. Game 2 the Heat made their adjustments. It's time for the Spurs to do the same.
It comes from the notion that, after getting blown out and then returning home and losing again, one might find it much more difficult to right the ship.
