Everyone else loves it but I've never liked mole, even my mom's. It's a pretty simple meal but Jalisco Grill's breaded steak is what keeps me going back. Their orchata water and gorditas are pretty good too. I'll have to check out Cascabel, I haven't had some good pozole in a while tbh.

You ever make the tamarindo water yourself? It looks like ing floaties in the pot when you're cooking the fruit to get the flavor out and into the water.
I have not made it myself. I, though, have seen it being made because I grew up with a bunch of Mexican friends and their abuelas would make it and they'd always hook our family up with it. I would imagine it to be not aesthetically pleasing since the tamarind fruit isn't all that great looking to begin with.
I've always felt Mole to be overrated as well.
My favorite foods would have to be Menudo and Tortas Ahogadas.
I have always felt mole is incredible when it's good but that most places don't do it very well. I never get it at restaurants though, just make it at home using Rick Bayless' recipe. It's great in Mexico but I haven't found a place in the US that does it really well, and have never been to Chicago so never tried it at one of Bayless' restaurants.
Beans cheese rice and flour. Its all the same .
Tamarindo might be my favorite. My moms used to make that and agua de jamaica all the time.

Never had a torta ahogada, any recommendations in San Antonio? Or you gotta go to Cali for that?
Never had em at a restaurant but you definitely have to give them a shot, man. I'm sure you can find them here in town.

Went there today. Really nice people, but was a little disappointed in the tortas. The chile and meat are good but the birote is the really thick, hard kind that's enclosed on the sides...and they cut it through the middle vertically instead of horizontally so for most bites the birote taste overwhelms the meat taste. I would use a thinner birote and cut through the middle horizontally like this:

lel the reason alot of San Anto Beans hate Chipotle is becuase it's not "authentic enough" and by that they mean the meats aren't fried in deep oil nor the beans and there's lil to no saturated fat. Which the traditional mexican diet from mexico is more healthier and more whole based on corn tortilla, boiled ed bean, guac and rice. hardly any cheese cept goat cheese sparingly. And usually its either goat cheese or meat as the protein, not both.
That's why you see these beans come up across the border and no longer look like beans but human sized greasy smelly footballs.

Cracks me up when people think Mexico Mexican food is beef and globs of cheese on everything. 's mostly pork, chicken, and goat.
I know right? I do love a good traditional Mexican breakfast of scrambled eggs wrapped in a sausage and then in a waffle taco.

Chipotle is damn fine. It's authentic for a fast food restaurant if you order the tacos in corn tortilla with chicken and mild salsa aka pico de gallo.

That at El Chivito as hot as everyone claims? I have never known chile de arbol to be overly hot. I use that all the time with some onion, garlic, salt, and water to make salsa for carnitas, pretty good salsa when you roast everything first, blend, and then strain that out.
