Why do people start sentences with "So"?

Sort of equivalent to saying "Anyways.." and then continuing the conversation as if the other person was just interrupting you...

"One More Again" It's used as a response.. like "do that again" "say that again" "one more time"... He was talking smack to my brother and he said that to my brother and we were all wtf?? Conversation kind of died after that...

I know.. horrible English.
