Only took a few pics, almost all of which didn't come out due to the poor lighting and dog phone, and we didn't have time to actually start making the sausage, copa, prosciutto, etc. today.
We don't use the heads anymore but we did when I was a kid and I distinctly remember the sound of my dad's buddy cutting out the teeth with a cleaver.

Coopers in Llano has a nice hot pepper sausage though that's pretty good. Haven't tried their New Braunfels location yet.

Smitty's ribs are way better than County Line, and Salt Lick kinda sucks ass. Best brisket is definitely at Snow's in Lexington, their Tx Monthly props are well deserved.
salt lick is the olive garden of bbq, yeah its good, but why would anyone go there?
