Taking a whole fish of your choice, scouring and loading up those grooves with lemon, herbs and seasonings, wrapping in foil (leave a good vent for the smoke to get in) and smoking in the pit.. comes out great

Grilled salmon is my go to but that's just because it's pretty common on menus everywhere.


I'll have to do some reflecting to come up with a favorite.
