I really don't get your beef about cashless, tbh... you even admitted you don't use cash yourself.
Not only that, but we've been in a fiat economy since the 70s (that's 50 years), so if you're concerned about the backing, well, this isn't new. Plus, you can still go to a bank and withdraw cash, if you're one of those people that like to keep his wallet stuffed.
I don't see where the alleged 'revolution' is in this realm. If there's one sector of the economy that really hasn't changed pretty much at all, it's banking.
Because government will be able to track exactly where and how we use our money. And don't give me the "oh if you do nothing illegal then you have nothing to hide." This is about government wanting to control every aspect of our lives and that's wrong.

There's nothing more or less the government is going to know on where you use your money from this pandemic. Like I said, cash is readily available if your thing is paying somebody under the table, or buying drugs, or whatever else you want to do with it.Because government will be able to track exactly where and how we use our money. And don't give me the "oh if you do nothing illegal then you have nothing to hide." This is about government wanting to control every aspect of our lives and that's wrong.

As a matter of fact, banks have been mandated to report high cash deposits and withdrawals (10k or more) to FinCen (part of the U.S. Department of the Treasury) for a long time now.
The coin shortage is actually not that complicated to understand either. With the lockdowns, the business closures, the banks being able to move less customers at a time, people doing much more delivery and pickup orders (which are normally paid digitally), shows and services suspended, etc, there's a load less money circulating around.
It's much easier to fill any monetary shortage with higher denomination bills instead of coins, because you simply need to print less of them to cover more of the gap, they last much less than coins, and they're substantially cheaper to make.
Minting coins is more expensive than making bills. And due to the economy moving largely to digital in the last two decades, dollar bills last much longer than what they used to (8 year on average now vs 3 years in the past). Thus the reason we haven't moved to $1 coins for a long time now (see here from 2013, here from 2019).
The Fed hasn't stopped minting coins either, they're just much more careful about minting because it has an additional cost and because coins last on average 30 years, so whatever money is injected in coins is going to be circulating for a long, long time. Very likely well past however long this pandemic lasts. And while they'll gladly absorb and destroy bills once the economic activity picks up, it's actually much more costly to do the same with coins.
You don't have to believe a word I wrote up there. But if you're wondering what the reason is from an economic and monetary standpoint, that's exactly it.
