Others I like that have been mentioned...Duane Allman, died so young, I think his best work was still to come.
Mark Knopfler, all of his work, but "The Princess Bride" soundtrack is especially beautiful.

Mike Campbell (Tom Petty), may not be the best but he's got sweet licks.
