These pros intentionally hit the wrist or the elbow. They are taught how to do that and get away with it most of the time. You think they are stupid fouls and wonder why they swing through on the block attempt but they are taught to hit the arm. Otherwise they would all defend like a Matt Bonner, just hold the hands up high.
