Those instructions were specifically for Israelites. I suppose you could make the case that Orthodox Jews are hypocritical for not following them, but the whole point of Christianity is that Jesus Christ's death and Resurrection abolished the Old Law and established a new one so that non-Jews could be saved. They (Gentiles) were never meant to now abide by Old Testament Law as a result of becoming Christians.

Now, there are plenty of passages from Paul's letters in the New Testament that Christians ignore in favor of other ones. Women covering their faces and remaining silent during worship, for one. Baptism, etc. Plus the whole Love Your Neighbor thing from Jesus himself.

Except those instructions include the big ten commandments. Nothing in the new testament sweeps them away. "I come not to set aside... but to fulfill".
