Creation story
There are several versions of the story about Ignacio's greatest creation. One commonality across these stories is that Ignacio worked as head of the dining room at a restaurant called the Club Victoria (later known as "The Modern"), which was located on a military base in Piedras Negras, Coahuila in 1943. A group of military wives took their seats and asked to taste something. Some versions suggest that they had arrived late, when the place was about to close, while others hold it was still early and that the restaurant did not have many available ingredients yet to prepare their menu. It is said that Ignacio took some fried tortillas cut in the shape of a triangle (or "totopos") and put them in the oven, but not before adding some grated cheese on top and some sliced chili peppers. To the surprise of the customers, it was a delightful improvised side dish. Asking for the name of the dish, Ignacio replied by uttering his nickname, "Nacho". He would later call his dish "Nacho's Special".
Legacy
On Thursday August 15, 2019, his 124th birthday, he was honored with a Google Doodle created by Alfonso de Anda [1].
