That's Alamo Heights Judson north side people who call Niosa Kneeosa they came to San Antonio in the 80s and 90s they made 1604 that used to be an old dirt road into a major hwy. A real Mexican from San Antonio had no reason to ever venture past 410. It was like the Latino version of Village.

You would think someone would snap and come up with Barbacoa fast food stands like they have Subways and McDonald's cater to the local public. Chicago has red hots and Italian hot beef sandwich stands every10 blocks.

This 5 year documentary on BigRed and Barbacoa in San Antonio has now come to an end as yesterday I was very lucky to finally track down the person who is responsible for this tradition. Jesse Flores who was an employee for 7up/BigRed in "1950" was the first person to bring Barbacoa to work and the employees loved it and the rest is history. Look for this film to be completed this summer and a special premier of this exclusively for the TRolls and all ST posters.
Long live BigRed and Barbacoa puro San Antonio!

Maybe your not a BigRed drinker. This tradition is really for the bigRed fans and they have been around since the 1950s Thanks to my discovery of Jessy Flores the BigRed Barbacoa king.

I just offered my collaboration since i was going to woodlawn lake anyway maybe somewhere down the line I may need a favor. But who knew I would actually find the man who started it all? I don't want to steal anyone's thunder plus I have a 10 day deadline of my own to make. But if anyone wants to be part of the film make sure you go to his facebook page

What exactly is barbacoa? Is it anything like tripas? My co-workers convinced me to eat a tripa taco at Fiesta this year and I almost threw it up.

I didn't think you could beat barbacoa on it's own and ate it by itself for years, but damn it's even better with the cilantro and onions. Love using an arbol-tomatillo salsa on it too, I think it works better than the serrano-tomatillo salsa I prefer for chicken.
