I've watched a shit load of Simpsons in my 27 years and the one where Homer blows out his knee and starts a day care center is the fucking best one ever.
What episode do you think is the greatest?

Too hard to answer.
I was given the first seven seasons on DVD for Christmas, spent a ridiculous amount of time watching them all, and each episode from season three on became my new favorite.

Where do you begin to narrow that down?
Maybe Homerpalooza, The Itchie & Scratchie & Poochie Show, or Marge versus the Monorail. Dude it is impossible to narrow it down to like 10 or 20, let alone one. Basically I think that the Simpsons were in their prime from like Season 3-11 or so. I still like the new ones a lot, but it seems like during those middle years each one was better than the previous episode.
Favorite characters are Homer (obviously), Moe, Milhouse, and any Phil Hartman character.

My favorite is the episode where Homer eats the Japanese "death fish" and has 24 hours to live. When the radio is on the next day, as Homer learns he lived through the night, the announcer says, "...and the San Antonio Spurs are favored to win the NBA championship." :)
The one where Mare gets a boob job is hilarious....

There are so many great ones but the one where Homer smokes marijuana is definitely my favorite. That look on his face the whole time is hilarious just by itself.

The grifting one was pretty good. My favorite character is the sarcastic guy by far. They don't use him nearly enough.

I love the episode where Lisa gives Ralph Wiggum a Valentine and it reads, "I Cho Cho Choose you." And he invites her to the Krusty the Clown Anniversary Show and he tells everybody, live on tv, that he loves Lisa Simpson. She blows up and says she doesn't like him and his little heart breaks and Bart recorded it and keeps playing back that part for her. :lol

Actually, Homer falls asleep listening to Larry King reading The Bible on tape. His comment about the Spurs is at the end as he's signing off.

Episode with Burns' Casino and Marge's gambling addiction is one of my very favorites.
As is the episode with the Guatemalan insanity pepper (picked from an insane asylum deep in the jungle primeval).
I love the Sideshow Bob episodes in general, but am particularly fond of the Cape Fear spoof.
And who can forget "Oh Streetcar!"?
Again, way too many to list.

I'll show you geekdom! It was Paul Harvey reading the Bible, not Larry King. I think, let me do some googling. EDIT: Guess my brain is going. I could have sworn it was Paul Harvey.
And my personal favorite would be the one where Bart and Lisa wind up in the same grade and get lost on their field trip.

The Babysitter Bandit
The one where bart has to repeat the 4th grade and he can't remeber the name of the stupid pirate (long jihn silver)....and his son tells him the answer and they both get detention.
King Size Homer.....Homer purposely gains enough weight to go on disability so he can work at home.
The christmas episode were they got Santa's Little Helper.....if he runs away he'll be easy to catch!! :lol
The one where Bart pulls the prank of Timmy O'toole falling down the well.
The one were Homer finds out he has a rich Half-brother Herb....who owns a car company and Homer ruins it with his "creation".
Any of the episodes were side-show bob tries to kill Bart.
The treehouse of horror where Ned gets poweres to envision peoples deaths.
