New Yawkers will tell you there is something special about bagels and pizza dough made with New York water that makes it different and gives them their "special" properties and taste. Haven't been to the city in a long time so I dunno if that's true or not.

It’s true with bagels (not the part about “New York water” but the part about taste), not really pizza though imo. You can go to a restaurant in plenty of other cities that make “New York style pizza” every bit as good as pizza places in New York make it, but bagel places in other states that make “New York style bagels” still aren’t anywhere near as the best bagel shops in NY.

No, it's absolutely true. I was on the MTA subways last spring when I lived there for about a month for work, including watching the 2018 NFL draft from an Eagles bar there close to my airbnb apartment. Every single subway car had that advertisement on the inside, next to all the Roman ED pill ads and "love where you live" apartment advisor ads... "NYC Bagels Are NYC Bagels Because of NYC Water - Keep NYC Water Clean" or something like that.
