I am guessing. But I think two demographics eat Taco Bell - very young that chooses TB over Mexican based on price. And adults that don't eat ethnic food beyond Panda Express.
I think you're missing the drunk crowd that rolls in to Taco Bell after midnight.

Taco bell isn't much cheaper than Mexican food here to be honest. A street taco is actually cheaper than their basic taco by almost a dollar.

Authentic Mex street tacos plus. Stop being gots about California.

Tacos El Gordo – Now in California & Nevada (tacoselgordobc.com)
The "mexican" food here is garbage. It's just corn tortilla tacos or burritos. It's for tourists and white folk.

Lol that's one place I've never been to at 2am or later

I've definitely been there after midnight. Although my preference for late night fast food is Whataburger (breakfast) or Jack in the Box.
But sometimes, Taco Bell is the most convenient.

If after 2 a.m. and no other choices available, bean and rice burrito.

I mean all Mexican food consists of is tortillas with meat, lettuce and tomatoes just folded different ways with beans and rice in the side.

And yet some here still manage to and it and charge too much for it.
That's not even accurate. The lettuce thing is very American. Tomatoes only go in a few things, not everything. And believe it or not, rice and beans isn't served with dinner all that often in Mexico. A lot of fine vatas from Mexico are actually quite thin and pale, not the stereotypical 340 pound Mexican-American morena frijolera you'd see on TV tbh.

Yeah I'm talking about the Mexican food restaurants here in SA, genius. Like the ones that serve tacos.

Every plate is a variation of a tortilla with meat, cheese lettuce and tomatoes.

You clearly haven't been to the right places. Garbage like Taco Cabana, perhaps.
