If a team approaches Mitch for an interview and he accepts said interview, would he leave if he is offered the position? I’m sure the Spurs already have a decision in place but that could make things more apparent.

I'm sure there are some minor conference college teams who would love to hire Mitch. They should make their pitches before it's too late!

I’m afraid one might. The choice between Mitch and Jenkins is obvious (there is no real ‘choice’)—but the Spurs are stupid and may go with Mitch anyway.
I would think would Mitch would take an opportunity to go somewhere else if it arises since a new coach typically brings in his own staff. Doesn't necessarily have to be a head coaching position, could just be a better assistant coaching position
I was one of Mitch's biggest critics when he began, and his first 50 games as head coach were as bad as I have seen. But in the last 20 or so games he started doing real coach things likes:
- using his coaches challenges
- changing line-ups that were clearly not working (instead of freezing on the sideline)
- going deeper into his bench to find sparks when needed
I am still a little perplexed he didn't have these basics down when he started, but there's hope, so I wouldn't be as mad if he stayed. Still would prefer Jenkins.
Mitch will definitely get interviews, bc PATFO's corporate knowledge still has a lot of value in a league that works by networking more than merit.
Either as head coach for a tanking team or as an assistant.

I think he'd be a fine assistant. Having some head coaching experience isn't a bad thing, even if he isn't head coaching material (yet).
But as it is starting to seem more likely that we'll have a new head coach coming in, remains to be seen how much of the staff they want to keep around.
If it's someone like Becky or Bud, I don't think they clean house. They would probably appreciate the "corporate knowledge"
If it's someone like Malone, all bets are off.
