    I love Taco Cabana, especially the slasa bar, wish we had it here in Oz.

    If I had a few million bucks I'd bring it here, because half-decent tex-mex is hard to find over here.

    My guacamole recipe:
    2 ripe avocados
    1 sm-med spanish onion, chopped VERY fine
    1 shot lemon juice
    1/2 shot lime juice
    6-12 shakes Tabasco sauce (depending on how hot you want it)
    a little salt and fresh pepper
    mmmmm...
    No way....

    avocado
    cilantro
    white/yellow onion
    jalapeno
    kosher salt
    fresh lime juice
    finely chopped garlic
    tomato (optional)

    and mash the out of it until it's uniform. I don't know exactly how much to put of everything, as I always just do it by taste when I make it.

    You guys are confusing guacamole dip, with real guacamole.

    The dip has all the stuff mentioned above, Real guacamole is just avocados, Back in Mexico when someone famous or important like Pancho Villa came around it was a custom to have the avocado already peeled. But sometimes the avocado was not all the way ripe so instead of serving a hard unripe avocado they smashed it.

    That is how is was first created. I prefer sliced avocado or smashed with salt,





    The taco already has the PicoDeGallo or salsa so i get my onion/cilantro fix on the taco already.

    I sometimes cut up some tomato and coriander (cilantro) with salt, mix that up and put it on the side. I noticed that a lot of people put garlic in, but I think as a strong flavour it tends to overwhelm the other flavours. Each to his own.

    I don't put much garlic in. Just a little bit is great for the flavor. You gotta have garlic in Mexican food.
