Any advice on what to do, what not to do...what to focus on, what not to miss, all that good stuff?

Go to Ellis Island for the 1.00 Micro Beers and the Best 10oz steak and Baked Potato and Green Beans for 6.99 it rocks. It is a block off the strip you can walk or just jump a cab. I assume your 21.
The Special is not on the menu and they won't tell you about it either. You just go in there and act like you know what your doing and order the special and tell them the temp it also comes with salad and a free beer too.

Ellis Island Brewery: It's not open all the time, but when it is, you get microbrew beer and big servings of decent, but sweet, ribs for an attractive price.
Metro Pizza: It's a fast-pizza outlet serving better stuff than Noble's and Domino's. It's fair to good, but the emphasis is on fast, not terrific. On the plus side, they have the casinos draft root beer on tap, and frequent 2-for-1 days.
Restaurant: Honestly, it's just called "restaurant." The food is cheap. The best part is that it's also pretty good coffee-shop fare. Their off-the-menu steak special for $7 actually includes a tender steak cooked to order. It's a good deal. Other menu items are typical coffee-shop fare, and the prices are rock bottom. Lots of daily specials that include ribs, steaks, burgers and on and on. We recommend it.
I hear Ellis Island isn't bad.
And bring bleach. Lots of bleach.
Good call The Beers are pretty damn good makes you over look the seedy folks that are in there.
Go to the Flamingo, get on the list for $1 $2 No Limit Holdem, Look for the guy with the mountain of chips in front of him with ey dark brown hair. Buy in for Max so I can proceed to take all of your money.
+1 on Ellis Island, its about half a mile off the strip at Flamingo and Koval, awesome food, awesome ribs, huge portions and very cheap. Its a locals secret here.

If you like golf play a round at Royal Links. It consists of 18 holes that are replicas of holes in the British Open rotation. Pretty cool.

These others people's advice is good & all, but just go out & discover. Have fun Don't get caught up in all thr gambling. Gamble some & play some. Vegas is all about fun. There is something around every corner.

Go downtown and check out the fremont experience. Casinos are closer together and its fun to drink beer and watch the light show.

We just went this past weekend. Wherever we went, we spent money. It was cool, so much to do. I don't think you can go wrong no matter where you go. I did notice that most of the fun, action, etc. was around the Mirage, TI, Venetian, Harrahs area.
I've always liked the downtown area for really late night, low limit gambling. I mainly go for the sights during the day and start my gambling night around 1am.
I dig the Ellis Island as well. Play some quarter video poker at the bar and you won't even have to pay the buck for the beer.
If you like cigars also, the Chicago Brewing Co in the Four Queens has a couple of couches so brewpub beers and cigars rock there.
For sight-seeing, check out most of the big casinos on the strip but I would avoid Ballys, Paris (unless you're going up the tower for $10-$15), Treasure Island, Monte Carlo (gambling is decent here), and the Flamingo (unless you go to the Mac King show which is fun and cheap). The MGM Grand has some things going on there but it's too big to wander around too much. For the smaller strip casinos, I would avoid the Stratosphere and the Tropicana. Harrahs isn't bad but I would hit other places before Harrahs.
Got to see Bellagio, Caesars Palace, Wynn, the Venetian and the new Encore. Hoover Dam is a good daytrip. You also should go downtown at least one night.
I love that place 1.50 beers and loose slots. Kinda smells like puke outside might want to bring bleach with you.
