All of the Final Fantasy's had pretty good sound production, but most of the damn sound track from Final Fantasy VII transports me right back to 6th grade in my head.
My off the wall pick goes to Tenchu: Stealth Assasins on PS.

Aerith is probably one of the most beloved video game characters of all time. She may not have the star appeal of a Mario or Sonic, but she was probably the fascination of more prepubescent teenagers than any other supporting character, and her tragedy instantly endears her to the player.
I would say Tifa probably was an equal source.

how can nobody mentioned Zelda: Ocarina of Time? that music is awesome. i knew how to play must of that on my guitar at one point. i also happen to think it's the best game ever.
I think that Final Fantasy VIII's music is better than VII's.

I'll give you some composers to check out:
AmIEvil (has a bass destroying Metroid track on there, SamusStrut I believe it's called)
The Wingless (look for his StarFox 64 and Metroid track called All the Girl in One World [and companion piece All the World in One Girl])
Scott Peeples (his Goldeneye mix is peppy, moves well, and really evokes the game)
There's some other great songs out there... a Mario Samba, a jazzy Zelda, an amazing amount of Chrono Trigger tracks (New Zeal is great). Oh, and there's two great Ninja Gaiden remixes of the same track, one a guitar version and one a techno. (Devil something or other, I think.)
Oh, and since you like the MegaMan 3 theme music, there's a version on OCRemix.org that uses a pan flute. It's hilarious and fun to listen to at the same time.
