What about a weekend getaway? Think of a few places she might like to visit and surprise her with plane tickets out of town.
And if it's going to be during the summer, that unlocks a lot more choices, like Chicago, Boston, NY, etc etc.

I'd go with the suggestion of a trip. I don't know where you can really go for 1k and I don't know what type of broad your lady is, but you can probably get a couple tickets to somewhere nice and adventerous or something like that.
If I had to say a place, I'd say Chicago if you go late spring, early summer. There's a lot to do there, meaning you can fill up your weekend pretty easily. (Visit the Sears tower (or whatever it's called now), check out Millenium Park, see a Cubs game, etc etc).
