    diced sausage ( 2 or 3 links of the HEB jalapeno and cheese smoked sausage works great) and mixed veggies. I'll brown the fideo and sausage in a little olive oil, then add a can of hatch tomatos and green chilis, another half can water or chicken stock, then right towards the end add a half bag of frozen mixed vegetables and simmer till most of the liquid is absorbed. It's a kickass one skillet meal with a prep time of about 10 minutes. It's my go to meal when I'm flying solo at the ranch.

    I think it's the broken spaghetti pieces they sweep up off the floor after they package the pretty long cut spaghetti.

    Seriously is it cheap pasta? or more like soup noodles?

    The "enriched" part on the box is confusing me.

    I like it by itself as a side dish and not the soupy version. Though, I've had it with albondigas as a soup and it's pretty good.

    I usually toast it in sesame, peanut or canola oil until it's good and evenly browned. The toasting is key. Then I add onion and diced tomato. In a molcajete grind garlic, salt, pepper and in. Add a little chicken broth to it to loosen the garlic paste and add the mixture to the toasted fideo. Then I add enough broth in the pan to simmer it.

    Basic and badass.

    My kids refer to it as Mexican spaghetti and love it ... I just had to take some turkey out of the freezer so I can make it this week. Now I want it! lol

    Hmmm, never thought of making it with turkey.

    I like mine a little soupy too, lots of onion and green pepper.

    This was a regular meal in our cheap household growing up.
