No you don't select a new team. The team you select in the beginning is the team you keep. You can make 1 free transfer after each matchday. So if there's a player you didn't like you can swap him out for someone else. You can make more than 1 transfer but it will cost you points.
You can't change your lineup every day. Only after each matchday. And even then you can only make 1 free transfer. So you can just pick your starting xi and not make any changes if you want. At least until the group stage is over because that's when you'll get unlimited transfers to compensate for the teams that were eliminated.
I think people are getting the term matchday confused.
Matchday1 =/= everyday.
Tomorrow won't be Matchday 2. Tomorrow is still matchday 1.
Go on your teams page and on the bottom right bellow squad it tells you the schedule.
I originally picked Neuer and Szczesny as my GK lineup.

Most of the time it if you made the right choices it shouldn't be a problem, but if the league is tight and you have an injury,suspension, someone's playing horribly, or the emergence of a cheap player.. you might want to make a change or two, and you better believe it's going to happen.
