What seas are we looking at here? It's pretty weird how sharp the contact looks from above. Is it just the water types involved or is there also significant change in depth?
I've done some reading and the seas meet from opposing directions and they do not merge because their densities are different. The second picture I posted is from Alaska.

Different basins will have different salinity which then in turn leads to different densities which inhibits the mixing. The reason oil floats on water is due to a difference in density. So when you have two substantially different bodies of water they also have different biological components (and mineral makeups) which lead to the different colors.
Sea water is much more than just water.
When you say biological components, are you referring to the ability of phytoplankton and other similar organisms to absorb/reflect certain wavelengths (giving bodies of water in the ocean a varied color dependent on the quan y of the autotroph species)?
